  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

  • 16 oz cream cheese, softened
  • ¾ cup pumpkin puree (not pumpkin pie filling)
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

For Serving

  • Whipped cream
  • Ground cinnamon

How to Make a Classic Pumpkin Cheesecake

  1. Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of an 8-inch springform pan.
  2. Pre-bake the crust: Place the pan in the Whynter TSO-488GB. Select Bake at 325°F and bake for 8–10 minutes. Remove and allow to cool slightly.
  3. Make the filling: Beat softened cream cheese and sugar until smooth. Add pumpkin puree, sour cream, and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing on low speed just until incorporated. Stir in cinnamon, ginger, nutmeg, and salt. Avoid overmixing.
  5. Fill the pan: Pour the cheesecake filling over the prepared crust and smooth the top.
  6. Bake: Return the pan to the oven. Bake at 300°F for approximately 50–65 minutes, or until the edges are set and the center still has a slight jiggle.
  7. Turn off the oven and leave the cheesecake inside with the door slightly open for about 15 minutes.
  8. Remove and cool completely at room temperature.
  9. Refrigerate for at least 4 hours, preferably overnight, before removing from the pan and serving.
  10. Garnish with whipped cream and a sprinkle of cinnamon.

Whynter TSO-488GB Tip

Use the Bake function and position the rack so the springform pan has adequate clearance from the upper heating elements. Baking time may vary depending on the pan and oven. Check for doneness near the 50-minute mark.

  • Doneness: The center should still jiggle slightly when finished. For a more precise check, the center should reach approximately 150°F.
  • Cooling: Refrigeration is essential for the cheesecake to fully set and slice cleanly.
